Water temperature does more than make tea hot. It changes how the leaf extracts—and can be the difference between a balanced cup and a harsh one.
Few things in tea making feel more harmless than letting the kettle boil.
For a strong black tea, that may be perfectly reasonable. For a delicate green tea, the same water can produce a markedly different cup. Temperature is not simply a matter of serving tea hot; it changes what the water extracts from the leaf, and how quickly.
The useful question, then, is not whether tea should be made with “hot water.” It is how hot the water needs to be for the tea in front of you.
What happens when hot water meets tea?
Brewing is an extraction.
As water enters the leaf, soluble compounds move into the infusion: caffeine, amino acids, polyphenols and numerous compounds involved in colour, aroma and taste.
Temperature changes the speed and extent of this process.
Research on black tea has found that temperature, brewing time, tea-to-water ratio and particle size can all alter the chemical and sensory character of the finished infusion. In one controlled study, the researchers' optimized conditions for the particular black tea they tested were approximately 89°C for six minutes—a useful demonstration that the relationship is more nuanced than simply using the hottest possible water.
It should not be taken as a universal recipe. Different teas behave differently.
Why boiling water works well for some teas
Robust black teas generally tolerate high temperatures well.
This is particularly relevant to the smaller-leaf and CTC-style black teas familiar across India. Their small particles provide considerable surface area, allowing them to produce a strong, coloured infusion quickly.
For a black tea destined for milk, high-temperature brewing can be especially useful: the tea needs sufficient body and intensity to remain present once milk is added.
But hotter is not automatically better.
Temperature is only one control. Leaf size, quantity and brewing time matter alongside it. Research examining black-tea brewing found particle size to have an especially strong influence on extracted non-volatile compounds.
A fine tea brewed very hot for a long time may therefore give you considerably more extraction than you intended.
Delicate teas deserve a gentler approach
Green teas are a good example of why one brewing temperature cannot sensibly suit every tea.
Their chemistry and processing differ from black tea, and studies examining brewing water and extraction have found green tea particularly susceptible to changes in brewing conditions and water composition.
In practical terms, a somewhat cooler brew often gives the drinker greater control over bitterness and astringency in delicate teas.
This is where temperature becomes useful not as a rigid rule, but as a flavour adjustment.
If a tea repeatedly tastes harsher than expected, lowering the water temperature is worth trying before deciding that you simply dislike the tea.
Temperature and time work together
A common mistake is to consider temperature and brewing time separately.
They are better understood as two parts of the same extraction.
Higher temperatures generally accelerate extraction. Longer contact gives extraction more time to proceed. Studies of black tea have also shown measurable sensory changes as infusion time increases; in one traditional Turkish brewing study, increasing infusion time affected colour, bitterness, aroma, astringency and overall sensory evaluation.
That gives us a much more useful way to troubleshoot a cup:
Too light? Increase leaf, time or temperature slightly.
Too bitter or aggressive? Try reducing time or temperature.
Change one variable first. Otherwise, you never discover which adjustment actually improved the tea.
Do you need a temperature-controlled kettle?
Not necessarily.
For everyday black tea and Indian milk tea, freshly boiled or near-boiling water is a perfectly practical starting point.
For more delicate teas, simply letting boiled water rest briefly before pouring can make a noticeable difference. A temperature-controlled kettle offers repeatability, but it is a convenience rather than a prerequisite for making good tea.
What matters more is understanding the principle.
There is no single perfect temperature for tea because there is no single tea.
The kettle is not merely heating the water.
It is setting the conditions for what the leaf will give you.
