Same tea, same kettle, different cup. Water chemistry, small changes in brewing and even the amount of milk can alter tea more than we realise.
You buy a tea you know well. You use the same cup, the same kettle and, as far as you can remember, the same method.
Yesterday it was beautifully aromatic. Today it seems flatter. Another morning it tastes stronger than expected.
The tea has not necessarily changed.
The cup is the result of several small variables—and we are not nearly as consistent as we imagine.
The most overlooked ingredient is water
Tea is mostly water, yet we tend to discuss the leaves far more than the water surrounding them.
That matters because drinking water is not chemically identical from one place—or sometimes one supply—to another. It contains varying concentrations of minerals and has its own pH.
Controlled research has shown that these differences can measurably change the colour, extraction and sensory character of tea. In studies comparing purified, mineral, spring and tap waters, researchers found differences in catechin and caffeine extraction as well as taste quality.
Minerals such as calcium and magnesium can interact with compounds extracted from tea. Other work has found water composition can even influence the volatile compounds responsible for aroma.
This explains a familiar experience: a tea can taste excellent at home and strangely different when made somewhere else.
It is the same tea.
But it isn't the same cup.
Your teaspoon isn't as precise as it looks
Then there is the tea itself.
A spoonful of loose tea is not a fixed measurement. One morning it may contain slightly more leaf; another, slightly less. With broken or fine teas, a small difference in quantity can noticeably alter concentration.
Brewing time varies just as easily.
Three minutes becomes four while breakfast is being prepared. Water cools while you answer the phone. A kettle is poured immediately one day and left standing the next.
None of these differences seems significant in isolation.
Together, they can be.
This is why professional tea evaluation relies on controlled preparation: consistency allows differences in the tea to be distinguished from differences in the brewing.
Milk introduces another variable
For milk tea, there is an additional complication.
A casual pour of milk can vary considerably from cup to cup. More milk dilutes the infusion and changes its colour, temperature, texture and perception.
Even the tea underneath it matters. A concentrated black tea may remain clearly present after milk is added; a lighter infusion can seem to disappear.
If yesterday's chai seemed stronger, the explanation may be considerably less mysterious than the tea itself.
You may simply have poured less milk.
Sometimes the difference is you
Taste is not an instrument reading.
We experience food and drink through a sensory system influenced by what came before it and the conditions in which we encounter it.
A cup after strongly flavoured food is not being tasted under the same circumstances as the first cup of the morning. Neither is tea drunk piping hot necessarily experienced in quite the same way once it has cooled enough for its aroma and taste to be perceived differently.
And expectation matters too. We are remarkably good at remembering that yesterday's cup was wonderful while being rather less good at remembering exactly how we made it.
How to make your favourite cup repeatable
You do not need to turn breakfast into laboratory work.
Just control the variables that matter most.
Use roughly the same quantity of tea and water. Pay attention to brewing time. If you drink tea with milk, learn approximately how much you add rather than relying entirely on colour.
And if a familiar tea suddenly tastes different after travelling or changing your water source, consider the water before blaming the leaves. Research consistently shows that mineral content and pH can influence tea extraction and sensory quality.
Most importantly, change one thing at a time.
A slightly disappointing cup does not always need more tea, more heat and another minute of brewing.
Tea is sensitive to small decisions.
Perhaps that is why making the same cup twice is more of a craft than it first appears.
